Ingredients
- 1 Sesame bagel (115g)
- 1/2 avocado, peeled and mashed (50g)
- 1 tsp lemon juice
- 3 slices of tomato (30g)
- 3 slices Mozzarella cheese (30g)
- or vegan Mozzarella style cheese, 8-10mm slices (45g)
- 1 tblsp pesto (15g)
- 6 fresh basil leaves
Serves 1
Method
- Mash the avocado with the lemon juice.
- Slice and warm the bagel then spread the mashed avocado on the inside of the bagel base.
- Add the sliced Mozzarella followed by the tomatoes and basil.
- Finish with the pesto an bagel top.
