  • 1 Sesame bagel (115g)
  • 1/2 avocado, peeled and mashed (50g)
  • 1 tsp lemon juice
  • 3 slices of tomato (30g)
  • 3 slices Mozzarella cheese (30g)
  • or vegan Mozzarella style cheese, 8-10mm slices (45g)
  • 1 tblsp pesto (15g)
  • 6 fresh basil leaves

Serves 1


  • Mash the avocado with the lemon juice.
  • Slice and warm the bagel then spread the mashed avocado on the inside of the bagel base.
  • Add the sliced Mozzarella followed by the tomatoes and basil.
  • Finish with the pesto an bagel top.
