Ingredients
- 1 Multigrain bagel, halved (115g)
- ½ ripe avocado, sliced (50g)
- 1 free range egg (42g)
- 2 tsp butter (10g)
- Pinch of salt and pepper
Serves 1
Method
- Toast the halved bagel and poach the egg in boiling water for 2 minutes.
- Once toasted, butter both halves of the bagel and layer the bottom of the bagel with the sliced avocado.
- Place the poached egg on top of the avocado.
- Finish with a sprinkle of salt and pepper and the other half of the bagel.
